Bacon, Spinach and Swiss Quiche


1 9 in. prepared pie crust

6 large eggs, beaten

6 pieces turkey bacon, cooked and crumbled

2 c. fresh baby spinach, chopped

1.5 c. whole milk

1.5 c. swiss cheese, shredded (I used Emmenthal)

salt and pepper to taste


Preheat the oven to 375F.

In a mixing bowl, combine the eggs, milk and salt and pepper.

In the prepared pie crust, layer the chopped baby spinach, crumbled bacon and shredded cheese.

Pour the egg mixture over the layered spinach/bacon/cheese mixture inside the pie pan.

Bake at 375F for 35 min, or until the egg mixture is set.
