No Bake Energy Bites

Cause we can’t only eat made from scratch croissants as snacks.  🙂

INGREDIENTS

1 c. (dry) (obviously) old-fashioned oatmeal

2/3 c. toasted coconut flakes

1/2 c. gr. flaxseed meal

1/2 c. peanut butter

1/2 c. chocolate chips

1/3 c. honey

1 T. chia seeds

1 t. vanilla extract

DIRECTIONS

Mix all ingredients in a bowl, and then refrigerate mixture (covered) for 30 min.  After 30 min., remove mixture and shape into balls approx. 1 in. in diameter with hands.  Store cookies in covered container in refrigerator.
