Sea Scallops

The base recipe for sea scallops is to season lightly, and sear on both sides in a little bit of heated olive oil.

12 medium sea scallops, cleaned.

4 T. extra virgin olive oil, plus extra for searing

2 garlic cloves, minced

1 T. minced fresh herbs (rosemary or thyme work well)

1 T. sea salt

1/2 T. freshly ground black pepper


Marinate scallops with olive oil, garlic, herbs, salt and pepper for 20 min.

Heat olive oil in skillet over medium-high heat.  Add scallops.  Sear 1 to 2 min. per side, until golden brown.  Serve immediately.
