I found some absolutely tiny potatoes at Fresh Market the other day. I know sharing a recipe for roasted potatoes isn’t terribly original, but they were good! Maybe it was using garlic powder instead of minced garlic, as the garlic powder didn’t burn under the heat.
1 lb small red skin new potatoes
3 T olive oil
1 t garlic powder
1 t salt
1/2 t black pepper
Preheat the oven to 400 degrees. Line a rimmed baking sheet with parchment paper. Scrub the potatoes and let dry.
In a bowl drizzle the potatoes with olive oil and sprinkle with the seasonings. Toss to coat
Pour the potatoes onto the parchment paper and bake for 40 minutes, or until tender.
