Slow Cooker Ham and Bean Soup

8 c. chicken broth

4 carrots, chopped

1 onion, chopped

2 T. tomato paste

2 t. Italian seasoning

1 t. salt (or more)

1 20 oz package 16 bean soup starter, rinsed

1 lb cooked ham, chopped

1 can (14.5 oz) diced tomatoes, undrained

 

  1. Combine all ingredients except ham and tomatoes in 5 to 6 qt slow cooker, cover
  2. Cook on low heat 8-10 hours
  3. Stir in ham and tomatoes; cover and cook 15 minutes longer until hot. Season with pepper to taste.
